From 65-110yo grenache, shiraz and mourvedre vines in five districts (parishes) of the Barossa Valley, cool-fermented separately, 7-10 days on skins, blended in tank where it undergoes mlf, bottled unfined and unfiltered. Old vines impart so much flavour there was no need of oak per se, but avoiding reduction requires some skill. That achieved, it still has to avoid confection, and this, too, is nowhere to be seen. Red fruits are the order of the day, trimmed by a satin ribbon of black notes.
